Growing production of oysters in Sonora

The production of oysters in the state of Sonora has increased by 30 per cent in 2011, in connection with the results obtained during the previous year.

This was announced Conrado Castañeda Partida, chairman of the State Committee of the Oyster Product System in Sonora, an organization that brings together several aquaculture production units of bivalve mollusks.

This committee, composed of 22 groups, seeks to improve the conditions of its members.

Sonora has three oyster production areas: northern, central and southern region.

The species planted in Sonora is the Pacific oyster, or gigas, although some producers also grow Cortez oysters.

The Mexican state is leading producer of oysters, said the producer.

is part of the Committee. It exports oysters and clams from the production unit located in the town of Caborca.

At the moment, only this unit has its waters certified by the Ministry of Health. Three bodies of water are still under the process of certification, estuaries Morua and Cinita in Puerto Peñasco, and Santa Cruz estuary, in the municipality of Hermosillo.

Conrado Castañeda explained that the high demand for oysters in the market encourages the authorities and producers to "put more interest" and forces them to be more aggressive as regards production.

Soon, the oyster of Sonora will be certified by the company Certimex as an ‘organic’ product.

The chairman of the Committee emphasizes that Sonora’s oysters are produced in clean waters and areas, and the staff is trained in terms of handling, safety and conservation.
